The most iconic, most beloved of all Italian cheeses! Understandably it is therefore also the most protected, coming only from a very restricted area: the provinces of Parma, Reggio Emilia, Modena, Bologna (on the left banks of the river Reno) and Mantova (on the right banks of the river Po).
