Nocino is a liqueur produced from unripe walnuts. Traditionally, the still-green nuts will be gathered on the feast day of St. John the Baptist (24th of June). The nuts are then left to steep in alcohol along with sugar, cloves and cinnamon until the winter months. The resulting liqueur is a dark yet clear mahogany, with spicy, nutty notes and aromas of clove and pine. The texture is syrupy, with piquant flavours that vary from the sweetness of dark chocolate to a mild bitterness of coffee. Serve straight or over ice.
