Artisan pasta producers Tanda E Spada have come a long way in 16 years. The company, based in Thiesi, Sardinia, produces no fewer that 40 types of pasta today, but it all started with the three regional specialities: Gnocchetti Sardi, Fregola and Malloreddus.
Fregola is small toasted "grains" of durum wheat dough and is a fantastic base for soups, warm dishes and salads, and can be used much in the same way as couscous.
